And it’s Alberto’s mother Patrizia who heads up the kitchen of the osteria, using just-picked produce from the convent’s own garden to conjure southern Italy’s finest dishes. History literally lives in the walls here – the Prior’s Suite retains original plaster fragments that tell the story of the convent’s prior cell.
